3 Gluten and Dairy Free Lunches for People on the Go

On the go? A meal prepper? These are my favorite three lunches to enjoy throughout the week. From last week, you know that there are many containers of soup in my freezer. Now, there are also many containers of lunch in my fridge. Most can be made as a dinner side (or course), and then used as lunches for the remainder of the week.

Just last month, my aunt tried my wild rice salad recipe for the first time, and realized how it makes a plenty filling lunch as well. So, without further ado, here are three recipes to try to mix up your mundane lunch routine.

One of my favorites!

This is one of my favorites! You can exclude the nuts for a nut allergy, and change the broth to keep it vegan. In fact, Massel makes a vegan chicken broth (also free of onions). Now, this is a classic in my house because I simply love it. I’ll eat this as a side for dinner, and then add some chicken to this dish and store it in my lunch container. Always served cool, this is a refreshing dish with a bit of a bite from the citrus and scallions. Yum!

Autumn Squash and Corn Salad

Gluten Free and Vegan

While named after the season of autumn, this is a great meal for the wintertime as well. It’s plenty filling and naturally vegan.

This salad is one of my most flexible meals as you can serve it warmed, at room temperature, or even cooled. Based on a family favorite from Nando’s Peri Peri, my mom recreated this dish using a gluten free. The key is to find a gluten free sriracha chili sauce, such as Lee Kum Kee.

Tri-Colored Potato Salad

Mayo Free Tri-Colored Potato Salad (GF, DF)

Hate mayonnaise  Allergic to it? This potato salad completely cuts it out while remaining delicious. This colorful meal will have your eyes filled with joy as you enjoy it at the office. The potatoes keep this side plenty filling, but feel free to add more bacon or some other meat if you need a little more “umph” to your lunch!
