Phew! Is it finally warming up back home? I’m preparing to come home from Australia just in time to enjoy my third summer in a row. I can assure you that even though it’s technically autumn, it’s still quite warm over here in the Northern Territory as well.
Now, I haven’t had as much time to cook while traveling, so there are some dishes that I cannot wait to make when I land in my own kitchen. And, like always, they’re all gluten and dairy free. Here’s the recipes on my summer must have list. What’s on yours?
While we can find tomatoes most of the year, local tomato season is by far one of my favorite times to head into the kitchen. This salad will take advantage of all the fresh produce. Plus, it’s delicious and easy to prepare (just involves a bit of slicing). Sure to be a hit at your next barbecue and will perfectly accompany any burger.

If it’s not tomatoes, then I’m looking forward to mangoes next. This recipe has a bit of heat to compliment the cool mango flavor. My favorite bit is that you can use it in a variety of dishes. Although my favorite is atop a piece of grilled chicken.

Save this one for the fourth of July and you’ll have a festive treat while the berries are perfectly ripe. This was a new recipe in our house last year, and I wasn’t expecting much, but the dressing blew me away. It provides such a rich flavor, and enhances all the fresh ingredients you already have in the salad.

This is one of my favorites! I will admit that I know people who can’t do the whole portobello mushroom bun because they find it too slippery (or just don’t like the taste of mushrooms). However, I can guarantee his will be the juiciest and most flavorful burger you’ve eaten in awhile. Just be prepared for a little bit of mess.
