As we enter winter, my freezer slowly fills up with frozen soups. In fact, I could practically live off soup all winter long. (And, popcorn, I’m kind of a popcorn addict.) We are only beginning to face the depths of winter. (I’ll admit, New England had a very mild November & December.) So these are my favorite soups, that you can enjoy until the spring flowers begin popping up.
We’ll start off strong with my favorite soup! Supreme pizza soup brings all the flavors of a meatlovers pizza without the gluten or dairy. It’s a great way to revisit the taste of pizza without the hassle of glue free baking. Plus, it will keep you plenty full and warm as you endure the cold nights ahead. (If you can have dairy, feel free to add cheese on top!)

Clearly, I like my meat in the winter. This is a much more mild soup, but once again, it brings in all the flavors of a classic gluten-filled dish! This is the only soup on the list that you can’t easily freeze, but it’ll stay in the fridge for a few days.
Recipe: Hamburger Soup
Now, this isn’t my personal favorite. BUT, it’s a freezable soup that is also vegan. And, I know there are quite a few vegan readers out there. My favorite bit about this soup is that it incorporates a variety of textures. Instead of simply using beans, which you’re more than willing to use, this soup incorporates corn and edamame for an interesting twist on chili.
Recipe: Chunky Vegan Chili
This is the only recipe that my mom claims tastes better once we made it gluten free. Originally made with a beer base, the cider in this dish brings in a beautiful aroma that wasn’t there before. Any cider will work, and we’ve been adding in some more fruity ciders lately. Be sure to taste this recipe as you season, so it isn’t too spicy. And, it goes beautifully with guacamole, corn chips, and/or corn muffins.
Recipe: Texas-Style Chili
This last soup is the only light soup on my list. (Let’s be honest, I’m preparing to hibernate like a bear during winter and I LOVE my filling soups.) However, this lighter soup is one of my favorites, especially with the warmth of curry flavoring. This recipe is also suitable for my vegan readers with the proper stock.
There you have it! Being gluten and dairy free doesn’t mean the winter has to be painful. And, many of these soups are great for meal prepping. (All except the hamburger soup, you could make months in advance. Woah!)
