Winter is fully underway out here in the mountains. Sure, we have less snow than we’d like. (That’s always the case.) However, there’s been some beautiful sunshine, and the season is off to a very nice start.
While I love the winter, there are some things that I miss about the summertime. Of course, there are the pool parties and tennis matches. More importantly in the food world, I miss light, refreshing dishes.
Don’t get me wrong, I love my Texas-Style Chili and my Classic Beef Stew. Yet, sometimes it’s nice to flashback to summer, and this raspberry dressing does just that. It’s perfect on top of a side salad, or on a main dish if you add some protein to the dish.
