Just in case you missed it… It’s Celiac Awareness Month!

I went on a baking craze today! Maybe it was for the arrival of my sister home from college, or our recent find of new boxed mixes that don’t contain tapioca (my pesky allergy).  Either way, I baked them all in celiac awareness style. So let’s check out the products!

Vegan Chocolate Chip Banana Bread

IMG_8766 The vegan chocolate chip banana bread isn’t a mix, but rather a recipe I posted earlier this week.  However, I had overripe bananas, and just had to make it! My mom and friends said that it didn’t taste gluten free, so I wanted to try to impress my sister on her return from school. 🙂

She enjoyed it too!  We tried a slightly longer baking time.  The middle didn’t sink at all, but we all agree that the 35 minutes is the preferred baking time in our household!

For celiac awareness, I crafted the bread into a ribbon. It’s important to let the bread cool for a few hours before cutting. Of course, the best part is eating the middle piece!

These cookies were delicious! They were softer than we were expecting, but this didn’t detract from the quality of the cookie. In fact, it added to it’s rich taste.  The key to making the sugar mix is to follow the directions on the box.  Glutino suggests using a soft butter, and whipping it until it’s light. This is key! Don’t skip this step! We used the  Earth Balance Natural Buttery Spread, instead of the stick we typically use because it’s softer.

Also, for those who can have cinnamon, these would be even better with a cinnamon sugar mix on top! Just sprinkle it on top before placing the cookies in the oven. And enjoy, this is definitely a mix to check out.

Note: I used an egg substitute of 2 Go-Go Squeezes, or approximately two-thirds cup of applesauce. I also dyed half of the dough green by placing a few drops of food coloring into the batter. 🙂

Betty Crocker’s GF Yellow Cake Mix IMG_8729

I’ve been cooking the Betty Crocker Gluten Free Vanilla Cake Mix for quite some time.  It’s suitable, but we’re still working on a cupcake recipe that I love.

Now, during this first experimentation my mom told me that she didn’t really like vanilla cupcakes.  Well, I read on other blogs that Betty Crocker’s yellow cake mix is better than the vanilla one.  So, I bought the mix, made them, and was very excited to show my mom.  But, when she came home, she told me that she meant that she liked CHOCOLATE cupcakes, oops! It makes sense since she’s a chocoholic. 🙂

As for a review, I definitely messed up the egg substitute in these cupcakes, so I’ll have to give them another shot.  Mom says she likes the taste better than the vanilla ones though!

On Saturday, I’m bringing in a snack to some of my non-celiac friends to show them that gluten free can taste good.   (I’m pretty sure the banana bread is coming with me but the cookie dough balls are a close second). Another great way is to change  your Facebook banner.  There are some classics like the one by the NFCA, but my favorite this year was posted on gfe’s blog.  It’s simple and to the point (and featured above).
