Chocolate Chip Quinoa Blondies (GF, DF)

Recently, I’ve been a little busy, and when I asked my sister to write a blog post for me, she said it would be one line long “This is yummy. Try it.” Now, that’s a pretty good endorsement from my gluten-eating, baking-loving, and honest sister.

While this is by far the best gluten free dessert we have going so far, it didn’t quite start out that way. This was our first time baking with quinoa flour, and it doesn’t smell very good. In fact, it made the batter smell so funny, my sister didn’t initially want to waste perfectly good chocolate chips on these blondies. But, with the magic of the oven, the blondies turned into pure deliciousness. Chocolate Chip Blondies (GF, DF)

Lesson: Don’t eat the dough, but be prepared to enjoy this dish!

Now, my amazing sister found, modified, baked, typed up the recipe, and even took some of the pictures for this recipe. So, all the credit goes to her! And, without further ado, here’s the recipe for my favorite dessert!

Chocolate Chip Blondies (GF, DF)

Chocolate Chip Quinoa Blondies (GF, DF)*

Allergens: Contains eggs and almonds (tree nuts).

Ingredients

All you’ll need!

  • ¼ cup Earth Balance Vegany Butter, softened
  • ¾ cup smooth or crunchy natural almond butter
  • 2 eggs
  • ¾ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • ¾ cup quinoa flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F. Grease and line an 8-inch-square baking pan with parchment paper.
  2. Beat Earth Balance and almond butter in a mixing bowl with an electric mixer until creamy.

  3. Beat in eggs, brown sugar, and vanilla.Chocolate Chip Blondies (GF, DF)
  4. Whisk quinoa flour, baking powder, and salt in a small bowl.

    Don’t smell the quinoa flour!

  5. Mix the flour mixture into the wet ingredients until just combined.
  6. Stir in chocolate chips.

  7. Spread batter evenly into prepared pan.

    All ready to bake!

  8. Bake 25-35 minutes (until a toothpick inserted into the center comes out clean with just a few crumbs on it). Do not overbake.
  9. Let cool in pan.
  10. Cut into serving size, and enjoy with friends!
