Flame Tree Barbecue in the heart of the Animal Kingdom has easy has some of the most savory quick service menu items in all of Disney Parks. Their covered seating gives you a prime view of Mount Everest. And, the portions are large enough to share if you’re up for a lighter meal (and you’re not the Celiac in your party!).
After meeting with the manager, I was able to eat a modified version of the ribs. They were delicious and smokey, just like you would expect from a barbecue joint. Even better, since I could have onion rings or french fries, I had watermelon (which isn’t even on the menu!). The manager was keen to cross contamination issues and gave me the individual packets of barbecue sauce, so I didn’t have to scoop it out of the big bucket.

As a side note: The Jumbo Turkey Leg is HUGE. If you’re bored, try to estimate the percentage of customers that order it because it’s much higher than you’d expect.
