It’s strawberry season in New England. So while I’ve been busy studying during my first few weeks of graduate school, my family went strawberry picking. And fortunately for me, they shared their strawberries. Yum!

And… they made strawberry shortcake! Then, I made strawberry shortcake. Needless to say, we’ve had lots of strawberry shortcake.

This “strawberry shortcake” may not be exactly what you’re expecting. It’s the quick way to make strawberry shortcake, AND it’s super tasty. In reality, we had great strawberries, and wanted to try out So Delicious’ Dairy Free Coco Whip. While we loved it on this treat, the coco whip tastes just like canned whipped cream. We thought it would be great on a strawberry daiquiri!

And, without further ado, here’s the recipe for y’all to enjoy!

Strawberry Shortcake (GF, DF)

Allergens: Contains Coconut and eggs. (Eggs may be easily omitted with an egg substitute.) Always pick ingredients that meet your dietary requirements.

Ingredients

  • 1 package of Vanilla Cupcake Mix (We used Stonewall Kitchen GF Vanilla Cupcake Mix)
  • ¾ cup strawberries for each serving of shortcake, hulled and sliced
  • 1 tbsp. granulated sugar for each serving of shortcake
  • So Delicious Coco Whip (CONTAINS COCONUT)

Directions

  1. Make cupcakes according to the package instructions. (If using Stonewall Kitchen, you will need to substitute Earth Balance for the butter. Use Cashew or Almond milk for the “milk”. Bake and cool. Save the frosting for another use.)

  2. Place strawberries in a medium sized bowl. Add sugar. Mix. Mash with a fork or potato masher.

    Mash them all up with sugar!

  3. Cut one cupcake in half for each serving. Arrange on a plate.

  4. Top with the strawberries.

  5. Top with the Coco Whip.
