Refreshing Tomato Salad (GF, DF, EF)Tomato season only comes once a year, so when it does I make all my favorite tomato dishes. Scratch that. Mom totally made this dish. I just took the pictures!

Anyway, my favorite part about this tomato salad is it’s refreshing nature, followed by its simpleness, followed by its bright colors. Really, there’s nothing to dislike about my mom’s tomato salad. In fact, all you can do is enjoy and wish tomato season came year round.

So grab your best set of heirloom tomatoes and enjoy this tomato salad recipe before the season is over! Trust me, you won’t want to miss it!

Refreshing Tomato Salad Recipe*

Allergens: Celiac Friendly and free of the Top 8 food allergens. Always purchase ingredients that meet your own dietary needs. 

Ingredients

  • Refreshing Tomato Salad (GF, DF, EF)2 tbsp. olive oil
  • 2 tbsp. white wine vinegar
  • 1 tbsp. green onions, sliced
  • 2 tsp. fresh basil
  • 1 tsp. sugar
  • ½ tsp. dijon mustard
  • ¼ tsp. salt
  • 5 heirloom tomatoes and 1 cup of cherry tomatoes
  • Kale, spinach, or a leafy product of some form
  • Ground black pepper

Procedure

  1. Combine the first seven ingredients (olive oil through salt) and whisk. Cover and chill in the refrigerator until you are ready to serve. Refreshing Tomato Salad (GF, DF, EF)
  2. Line a serving platter with kale, spinach, or a leafy product of some form. Refreshing Tomato Salad (GF, DF, EF)
  3. Slice your tomatoes and arrange them on top of your leafy green. Refreshing Tomato Salad (GF, DF, EF)
  4. Take the dressing out and whisk it one last time before drizzling the dressing on top. Refreshing Tomato Salad (GF, DF, EF)
  5. Sprinkle with ground black pepper. And, ta da! You’re now ready to serve a refreshing tomato salad.
