Triple Chocolate Cookie Recipe (GF, DF)

I love Australia. But, one of the things I miss most are my homemade treats. I haven’t set up enough of my own gluten free pantry to make some of my favorite sweets!

Recipe for Triple Chocolate Cookies (Gluten and Dairy Free)

Now, I just began using those 1 for 1 flour mixes this past year. And, as we all know, nothing is truly a one for one substitute for ALL goods. Some baking mixes make better pies, some make better cakes, and other better cookies. (This is because different sweets require different amounts of xanthan gum.) Well, we’ve found that Cup-4-Cup’s Wholesome Flour Mix makes great cookies! 

And, not only did we cook up some chocolate chip cookies, we now have a special version for the chocoholic in all of us! (Well, everyone in my family.) It’s important to know that we like this mix because the cookies don’t have an aftertaste AND they have a marvelous texture. However, you may still find a small piece of flaxseed in your mouth after enjoying a cookie.

So, for the chocolate lovers out there, give this recipe a shot! And, if you use a different flour mix, let me know how it comes out!

Triple Chocolate Cookies (GF & DF)*

Allergen Warning: Contains Eggs.

Ingredients:

  • 1 cup of Earth Balance Vegany Butter
  • 1 cup of granulated sugar
  • 2/3 cup firmly packed light brown sugar
  • 2 eggs
  • 1 tsp. vanilla or peppermint extract
  • 2 cups of Cup 4 Cup’s Gluten Free Wholesome Mix (This one is dairy free too!)
  • 2/3 cup of unsweetened cocoa powder
  • 1 tsp. Baking Soda
  • 1/4 tsp. salt
  • 1 cup of dairy free chocolate chips
  • 1 cup of Premium Chocolatiers white chocolate chips (cut into small bits)

Procedure

  1. Preheat the oven to 350 degrees.
  2. Beat the earth balance, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the eggs, and vanilla extract. (Or peppermint extract if you’re in the Christmas spirit!)
  4. In a separate bowl mix together the dry ingredients: gluten free flour, cocoa powder, baking soda and salt.
  5. Gradually add the dry mixture to the wet mixture.
  6. Stir in 1 cup of dairy free chocolate chips and 1 cup of Premium Chocolatiers white chocolate chips (cut up). OR, you can substitute in two different types of chocolate chips.
  7. Drop onto an ungreased cookie sheet using an ice cream scoop.
  8. Bake for 9 minutes.
  9. Ta da! You now have 3 dozen cookies!
