Vegan Fall Leaves Cupcakes for Thanksgiving

Cute fall leave cupcakes made with gluten free and vegan royal icing! Perfect for Thanksgiving! It’s almost Thanksgiving! And, the cupcake decorator in me just couldn’t miss out on the chance to celebrate another holiday/season. So I made some fall foliage decorations that are perfect for both October and November.

To make these I used an eggless royal icing. (Don’t worry it’s gluten and dairy free too!) So, as long as you pick an appropriate powdered sugar, these decorations are vegan as well!

Leaves in all sorts of colors! It’s easy because you can mix red and yellow icing to make orange! :)

When deciding what decoration to make with royal icing it’s important to consider a few things. First, can I trace it on wax paper neatly? For this, I recommend using preschool coloring sheets. That’s what I find easiest to trace.

Second, how much time do I have? My eggless royal icing takes a bit of time to dry, so if you need these to dry in say 12 hours or so, you’ll want to do an outline. (If you do a filled-in design like my witches’ hats, they’ll take MUCH longer to dry.) And, third, what do I want to decorate?! That’s about it.

You can find loads of simple leaf patterns in a heartbeat.

These were my first outlined designs, and I think they came out pretty well. The trick is that instead of pulling them up with your fingers, you should pull down on the wax paper, and slowly fold it away. That way they won’t crack! 😀
