Watermelon Delight (& Hiding the Flax)

Screen Shot 2014-05-05 at 9.42.18 PMAfter my celiac diagnosis, my GI sent me to a nutritionist. Based on my other allergies, medical conditions, etc. one of her suggestions was to introduce flaxseed into my diet.  I think it was for the fiber, but I cannot clearly recall at the moment.

My family instantly began a hunt for ways to introduce flax into my diet.  Most of the time we hid it in my morning oatmeal or a breakfast smoothie. However, one day my sister found a flaxseed chocolate bar. I hadn’t tasted flaxseed before. My first bite was so bitter! It tasted much like coffee to me (but I’m sure coffee lovers would disagree). While I finished the bar, we decided to return to our original strategy of hiding the flax. Ever since, it’s become a habit to hide flax in each smoothie I create.

20140502-101821-1024x881Now on Sunday, Laura from the Gluten Free Treadmill posted a Sunday Smoothie Link-Up! I just had to join in, not only because I read her blog everyday, but because I love smoothies. While I haven’t made my way into green smoothies, I decided to post a refreshing dessert smoothie that is perfect for summer!

While my Watermelon Delight smoothie is certainly not nutritious, I still add ground flaxseed to it.  This smoothie can easily take up to one tablespoon (per cup) without tasting it at all!

Watermelon Delight

Allergens: Celiac friendly and free of the top 8. Always check the labels on the ingredients you choose to purchase.


  • 2 cups of Watermelon
  • ½ a Banana
  • Raspberry Sorbet (Generous Scoop,  ≈ ¾ cup)
  • 1 cup of Ice
  • Few Strawberries
  • 2 Tbsp. Ground Flaxseed (optional- check that it’s GF!)
  • Sugar (optional- to decorate the rim)


  1. Chop up the watermelon, and make sure not to get any seeds.  This is obviously easiest with a seedless watermelon; however, I find it easy to avoid seeds and pull them out (when necessary) if you cut thin slices of watermelon.IMG_8668
  2. Place watermelon, banana, sorbet, ice, and strawberries in the blender. Mix until consistent.
  3. Pour into a bowl and mix in flax seed with a spoon.  Continue mixing until you can no longer see the flaxseed (or there are no more clumps).Screen Shot 2014-05-05 at 10.26.36 PM
  4. Dampen edge of glass and coat in sugar.Screen Shot 2014-05-05 at 10.11.29 PM
  5. Carefully pour the smoothie into the cup, so that you do not mess up the sugar rim. 🙂
  6. Serve cool and enjoy. (You may store in the fridge if you have a delay between preparation and serving time).IMG_8697

Tips and Tricks

  • If you prefer, you could mix in the flaxseed in the blender.  However, I choose to do it in a bowl, so that the blender is easy to clean! Also, this way someone in your party can have flaxseed, while someone else may opt out. 🙂
  • If you don’t have ice on hand, substitute in ¾ cup of water for the ice.  After mixing, place the drink in the fridge for approximately 15 minutes or the freezer for 5. (This works for Watermelon Delight because the smoothie is intended to be thin).
