A Most Filling Gluten Free and Vegan Meal!

Surprise! I’ve been out in Colorado having a phenomenal time for the past week.  Which means on top of great food, I have new restaurant reviews for all the places I visited while I was away!

We’ll start off the week with my favorite restaurant in the Beaver Creek, Zach’s Cabin! I’ve reviewed this restaurant once before, but I had a phenomenal experience yet again, especially last Friday.

As you may know, Fridays in Lent are not my favorite day of the week because I cannot eat meat on top of my preexisting dietary constraints. But this was no problem at Zach’s Cabin, I enjoyed their Zucchini Pappardelle with toasted garlic tomato sauce, kalamata olives & rouille crostini.

The dish is absolutely delicious.  The thinly sliced zucchini brings a familiar texture of sagnarelli with a slight twist. Additionally, unlike many gluten free and vegan dishes, I found this meal to be quite filling.  Definitely enough sustenance to keep me going on the ski mountain for the rest of the day!

Why did I trust that this meal didn’t have any cross-contamination problems?  With every meal, Zach’s is careful to explain just how they prepared my food.  For example, most days I eat a salad that is not actually on the menu.

My citrus flavored, arugula salad with chicken, is my go to meal for ski lunches.  The chicken provides me the energy to make it through the rest of the ski day, and the citrus flavor warms my heart on the coldest of days! Now, when I first ordered this meal, I was informed that my chicken was cooked in its own pan to avoid contact with other items in the oven.  Additionally, they chose not to place it on the grill where it could face cross-contamination issues. Overall, Zach’s Cabin is the restaurant where I feel the safest eating while in Beaver Creek!

How to dine at Zach’s Cabin: 

Zach’s Cabin is located on Beaver Creek Mountain, specifically in Bachelor Gulch.  If you are a member of the Bachelor Gulch Club or a similar club in Beaver Creek, you have the option to eat a sit-down lunch on the mountain! This makes for a great break instead of the crowded lodge.

However, if you are not a member, you can still dine at Zach’s Cabin for dinner! In fact guests arrive via an open air sleigh, which is quite a unique experience. They are open Tuesday through Saturday nights during the winter season (December to March).
